This week we are making a low carb cabbage soup that is perfect for your keto diet. In this soup we use simple ingredients to take an ordinary soup and turn it extraordinary. Lots of flavor, low calorie, and low carbs makes this the perfect soup for detoxification, staying in ketosis, or cooking on a budget.
If you are looking to get into ketosis or are trying to count your carbs this soup comes in at only 10g net carbs per serving. The recipe makes a large batch but you can adjust the quantities by sliding the servings bar up or down. Each serving is roughly 1 pint or 2 cups.

Low Carb Cabbage Soup (Keto Friendly)
Ingredients
- 1/2 cup extra virgin olive oil
- 1 large onion chopped
- 8 cloves garlic minced
- 4 quarts vegetable stock low sodium
- 1/4 tsp thyme
- 1/4 tsp oregano
- 2 tsp dried parsley
- 1 large cabbage chopped into 1-2 inch chunks
- 4 carrots peeled and chopped
- 6 celery stalks chopped
- 8 oz tomato sauce keto approved-no sugar added
- 28 oz roma tomatoes diced
- salt to taste
- pepper to taste
Instructions
- Core and chop the cabbage. Clean and dice the carrots, onions, and celery.
- In a large pot add some olive oil and heat till shimmering. Add the carrots and the onions and saute till they begin to turn soft. Add the celery and garlic and cook another 5 minutes.
- Add your seasonings, tomato sauce, diced tomatoes, and stock. Mix well. Finally add the cabbage and cook on medium for about 30 minutes till the cabbage has softened but still has some "Bite" to it. Serve and enjoy.
Freezing Instructions
- To freeze let it cool completely down and package in freezer safe storage bags. All you need to do to reheat is thaw dish and heat on the stove top. If you use boil-able bags like me then simply boil the bag for 20 minutes and serve..
